Ingredients
- 1 1/4 cup old-fashioned organic oats
- 1 cup organic milk
- 1/2 cup organic brown sugar
- 1/2 cup organic applesauce
- 1 tablespoon orange zest
- 1 organic free-range egg
- 1 cup organic whole wheat pastry flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon organic ground cinnamon
- 1 1/2 cups Allgood Provisions Organic Sundried Blueberries (order some here!)
Directions for making the perfect batch of Organic Blueberry Oatmeal Muffins:
- Preheat your oven to 425° F
- In a large bowl, stir together your oats and milk. Let the oats soak in milk for about 15-20 minutes
- Add brown sugar, applesauce, orange zest and egg to the oats mixture, stirring all ingredients until evenly mixed
- Next, in a medium bowl, stir together the flour, baking powder, baking soda and cinnamon
- Add dry ingredients mixture (from the medium bowl) to the oatmeal mixture in the large bowl, stirring until wet and dry ingredients are just combined
- Quickly fold in 1 cup of the Allgood Provisions Organic Sundried Blueberries
- Spoon your delicious batter into muffin cups and sprinkle with remaining 1/2 cup of Allgood Provisions Organic Sundried Blueberries
- Bake for about 20 minutes (or until the tops are a beautiful golden brown)
- Remove muffins from pan and allow your tasty batch of Organic Blueberry Oatmeal Muffins to cool completely on a wire rack
