Add greens, apple slices, pecan halves, dried cherries, and blue cheese chunks into a large salad bowl.
In a small jar, mix Dijon, maple syrup, vinegar, olive oil, and salt and pepper. Put the lid on the jar and shake well to mix.
Pour a little salad dressing over the top of the salad and toss to combine. Taste salad and add more salad dressing to taste.
While cherries are grown in several states, we source our red tart cherries from our organic growers in Utah and Washington state. There are several varieties of cherries but we choose the Montmorency varietal for its taste, usability, and nutritional benefits.
The Montmorency cherry tree is named for an area near Paris, France. However, the cultivation of this tart cherry dates back to Ancient Rome. The Romans discovered the fruit along the banks of the Black Sea. They began planting cherry trees along roads throughout the Roman territory for food, as well as, wood to build weapons and equipment.
Not only are our tart cherries sun-dried and lightly sweetened to perfection, but they are bursting with added health benefits.
Cherries contain natural melatonin, which is a powerful antioxidant and free radical scavenger that helps "cool down" excess inflammation and associated oxidative stress. It also plays a vital role in sleep and bodily regeneration.[2]
According to an Oregon Health & Science University study, consuming tart cherries before exercise significantly reduces the amount of inflammation in the muscles, as well as, contributes to more rapid muscle strength recovery.[3]
Cherries are very high in potassium, which helps regulate heart rate and blood pressure and reduces the risk of hypertension. The phytosterols in cherries help reduce bad cholesterol levels.[4]
A portion of all sales of our organic sun-dried cherries is pledged to the Breast Cancer Prevention Partners non-profit. The BCCP works to prevent breast cancer by eliminating our exposure to the toxic chemicals and radiation linked the disease.

World Water Day and Earth Day make us rethink our efforts to preserve the ocean and to renew our gratitude to the Earth. Our thoughts shift, and we always make a summer resolution to get to the ocean more often. To inspire us to make that happen, we wanted to catch up with a foodie that we love, surfer Jasset Iva. When she's not modeling or planning epic trips to Australia, she's in the water catching a wave. Though she used to surf competitively, it took out the whole reason she began surfing in the first place - to have fun. We were so happy to have the chance to catch up and talk with Jasset between sets. If you could surf just one wave for the rest of your life, what would be your perfect wave? Lennox head in Australia - it breaks forever and is just the most perfect right hand. The place is beautiful too. What has been your favorite memory growing up surfing? Growing up surfing, my favorite memory was having a two-story shack on the beach. Surf boards would go on top. On the bottom, there was a big table, lights, and a tire swing. So at night, all of my friends and I would eat dinner out there and then after try to catch ghost crabs while listening to music. It was so fun! What's your ideal post-surf snack? As if having 4 restaurants spread across Georgia isn't enough to keep a chef busy, Hugh has been appearing at demos and events throughout the nation, writing and promoting his new cookbook, revamping home-ec classes, judging "Top Chef", all while managing to be at home to make home cooked meals for his family. As a chef and father, what food-related beliefs are most important to you? I believe in making food great with as many local ingredients as possible. I believe in giving restaurant workers respect for craft and paying them a good living wage. I believe in advancing ideas in food but truly respecting and learning the foodways that got us here.

Before moving to Georgia, what did you think of Southern food? I was a little guilty of falling into the common misinterpretation. But that quickly changed.
I think the outside perspective of Southern food is a little skewed. It is viewed as being tasty but not healthy, something that really defines more the foods of new convenience than the true idea of Southern food. Southern food is redolent with vegetables and fruits and is a constant reaction to the garden. It is a beautifully balanced meal when you look beyond that fried chicken and biscuit and see the tomatoes, the greens, the succotash, pirloo and pickles.
Mmm, speaking of Southern food... What in-season foods, ingredients, or techniques have you been loving lately?
